Spread the love

A creamy, crunchy, naturally delicious treat made with protein-rich Greek yogurt and pistachios. These individual cups are lightly sweetened without added sugar, making them a satisfying dessert for a diabetes-friendly lifestyle.

  • 2 cups unsweetened Greek yogurt — plain, full-fat or low-fat
  • ¼ cup unsalted pistachios, finely chopped
  • 1–2 tbsp sugar-free sweetener such as stevia or monk fruit, to taste
  • 1 tbsp chia seeds — optional, for extra fiber
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened coconut flakes — optional
  • ½ tsp ground cinnamon
  • 1–2 tbsp pistachios, roughly chopped, for topping
  • A few fresh raspberries or strawberries for garnish — optional

Step 1: Pistachios Preparation

  • Finely chop ¼ cup of pistachios. Keep a small amount of the coarser pieces aside for topping.

Step 2: Making yogurt mixture

  • In a bowl, mix well greek yogurt, sugar-free sweetener, vanilla extract and cinnamon. Stir until smooth and creamy.

Step 3: Adding the crunch

  • Fold the chopped pistachios and chia seeds into the yogurt mixture. Mix gently so the pistachios remain slightly crunchy.

Step 4: Filling the cups

  • Divide the mixture evenly between 4 small dessert cups or jars.

Step 5: Chill

  • Sprinkle each cup with the remaining pistachios and optional coconut flakes. Refrigerate for 30–60 minutes for a firmer, chilled texture.

Step 6: Serving

  • Add a few fresh berries just before serving. Enjoy chilled.

Nutrition will vary depending on the coconut cream, Greek yogurt, and sugar-free sweetener used.

  • Low-GI friendly: Plain Greek yogurt and pistachios are generally lower-impact carbohydrate choices.
  • Protein + fat + fiber: The combination can help slow digestion and reduce the likelihood of a rapid blood-glucose rise compared with a conventional sugary dessert.
  • Avoid sweetened yogurt: Choose unsweetened Greek yogurt and check the nutrition label for added sugars.
  • Berries: If adding fruit, choose a modest portion of fresh berries rather than higher-sugar fruits or dried fruit

  • Keep the recipe divided into 4 individual cups rather than eating directly from one large bowl.
  • Stick to approximately ½ cup per serving.
  • Keep sweet toppings such as honey, maple syrup, dates or dried fruit out of the recipe if you’re aiming for a lower-sugar dessert.
  • For a more substantial snack, pair one cup with a few additional nuts rather than increasing the sweetener or fruit.
