Spread the love

Are your tastebuds craving for something sweet and refreshing? These delightful Strawberry Chia Popsicles is a treat made from fresh strawberries, creamy Greek yogurt, chia seeds, and unsweetened almond milk — with no added sugar.

  • 1½ cups fresh strawberries
  • ¼ cup unsweetened almond milk
  • ½ cup unsweetened Greek yogurt
  • 1½ tablespoons chia seeds
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract

Step 1: Strawberries preparation

  • Wash the strawberries & add them to a blender and blend until smooth. For a slightly chunky texture, pulse briefly instead of fully blending.

Step 2: Mixing the ingredients

  • Mix greek yogurt, almond milk, lemon juice, vanilla extract and cinnamon. Blend again until creamy and well combined.

Step 3: Adding the chia seeds

  • Pour the mixture into a bowl and stir in the chia seeds. Let it sit for 5–10 minutes, stirring once or twice, so the chia seeds begin to swell.

Step 4: Filling into moulds

  • Pour the mixture evenly into 6 popsicle molds. Leave a little space at the top for expansion. Insert the sticks.

Step 5: Freezing

  • Freeze for at least 4–6 hours, preferably overnight, until completely firm.

Step 6: Serving

  • Run the outside of the mold under lukewarm water for a few seconds to loosen the popsicle. Remove gently and enjoy immediately.

Nutrition will vary depending on the coconut cream, Greek yogurt, and sugar-free sweetener used.

  • Strawberries have a low glycemic impact and provide fiber and antioxidants.
  • Chia seeds add fiber, protein and healthy fats, which can help slow digestion.
  • Using unsweetened Greek yogurt and unsweetened almond milk keeps added sugar low.
  • Although the recipe is diabetes-friendly, portion size still matters, and individual blood-glucose responses can vary.

  • Stick to 1 popsicle per serving.
  • For a more substantial dessert, pair one popsicle with a small serving of unsweetened Greek yogurt rather than eating multiple popsicles.
  • If using a sweetener, choose a zero- or very-low-calorie option that fits your dietary preferences.
