Creamy, refreshing, and deliciously tropical! πŸ₯₯πŸ‹ This Sugar-Free Coconut Lime Mousse is easy low-carb dessert made with unsweetened coconut cream, Greek yogurt, fresh lime, and vanilla. It is made without any added sugar and is portion-controlled for a diabetes-friendly treat.

  • 1 cup unsweetened full-fat coconut cream, chilled
  • Β½ cup unsweetened Greek yogurt
  • 1 tsp fresh lime zest
  • 2 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • ΒΌ tsp cinnamon β€” optional
  • Β½ tsp unflavored gelatin + 1 tbsp water β€” optional, for a firmer mousse
  • 1–2 tbsp granulated sugar-free sweetener such as monk fruit or erythritol, to taste

Step 1:Β Coconut cream preparation

  • Coconut cream should be chilled before preparing the mousse. Scoop the thick cream into a mixing bowl, leaving excess liquid behind.

Step 2:Β Making lime mixture

  • In a separate bowl, whisk together the Greek yogurt, lime juice, lime zest, vanilla extract, sweetener, and cinnamo

Step 3:Β Combine

  • Gently bend the lime-yogurt mixture into the coconut cream until smooth and creamy. Avoid overmixing so the mousse stays light.

Step 4: Chill the Mousse

  • Divide the mousse between 4 small serving glasses. Refrigerate for at least 2 hours, or until nicely chilled and set.

Step 5: Garnish & serve

  • Top up with a little fresh lime zest and a small sprinkle of unsweetened coconut flakes. Serve cold.

    • Estimated GI: Low β€” the mousse contains very little carbohydrate and no added sugar.
    • Greek yogurt provides protein, which can help make the dessert more satisfying.
    • Lime juice and zest add plenty of flavor without significantly increasing carbohydrates.
    • Coconut cream is high in fat and helps slow digestion, but it is also calorie-dense.

    • Keep the serving to one small glass (ΒΌ of the recipe).
    • Avoid turning it into a large dessert bowlβ€”the coconut cream makes this quite calorie-dense.
    • For an even lighter version, replace some coconut cream with additional unsweetened Greek yogurt.
    • Pair it with a meal rather than eating several servings as a standalone snack.
