A creamy, naturally sweet smoothie inspired by classic carrot cake—made with fresh carrots, Greek yogurt, warm cinnamon and ginger, and crunchy walnuts. It delivers satisfying protein and fiber without added sugar, making it a better-balanced choice for a diabetes-friendly breakfast or snack.
Ingredients (1 Serving)
- ½ cup finely grated carrot
- ½ cup plain, unsweetened Greek yogurt
- ¾ cup unsweetened almond milk
- 1 tbsp walnuts
- 1 tbsp chia seeds
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp vanilla extra
- Pinch of nutmeg
Step-by-Step Instructions
Step 1: Preparing the carrot
Wash, peel if desired, and finely grate the carrot. Finely grated carrot blends more easily and gives the smoothie a smoother texture.
Step 2: Add the ingredients
Add carrot, Greek yogurt, almond milk, walnuts, chia seeds, cinnamon, ginger, vanilla, nutmeg and ice to a high-speed blender.
Step 3: Blend until smooth
Blend for 45–60 seconds until smooth and creamy. Add a small splash of almond milk if the smoothie is too thick.
Step 4 : Taste & serve
Taste and add a small amount of monk fruit or stevia if needed. Pour into a glass and optionally sprinkle with cinnamon and a few crushed walnuts.

Glycemic Index (GI) Considerations
- No added sugar: The recipe relies primarily on carrot and the optional non-sugar sweetener for sweetness.
- Protein + fat + fiber: Greek yogurt, walnuts and chia seeds help make the carbohydrate load more balanced.
- Carrots are relatively low GI: Although carrots contain natural carbohydrates, their fiber content and relatively low glycemic impact make them a reasonable smoothie ingredient.
- Avoid fruit juice or dates: These can substantially increase the carbohydrate and sugar content.
- For diabetes management, portion size and total carbohydrate intake matter more than GI alone. Individual glucose responses can vary.
Portion Control Tips
- Stick to one serving (about 10–12 oz) rather than making an oversized smoothie.
- Use plain, unsweetened Greek yogurt rather than flavored yogurt.
- Use unsweetened protein powder to avoid hidden sugars
- Pair with a handful of nuts if you need a more filling meal.
