These Raspberry Coconut Popsicles combine juicy raspberries, unsweetened Greek yogurt and coconut for an easy frozen dessert with no added sugar. These popsicles are naturally sweet-tart, satisfying, and made with Greek yogurt and coconut for a delicious diabetic-friendly dessert.

  • 1 cup fresh or frozen raspberries
  • 2 tbsp unsweetened shredded coconut
  • ½ cup unsweetened coconut milk
  • ½ cup unsweetened Greek yogurt
  • 1–2 tbsp sugar-free sweetener, to taste
  • ½ teaspoon cinnamon
  • ½ tsp vanilla extract
  • 1 tsp fresh lemon juice
  • Pinch of salt

Step 1: Preparing the raspberries

  • Mix raspberries and lemon juice to a blender. Blend until mostly smooth. For a smoother popsicle, strain out the seeds.

Step 2: Make the coconut mixture

  • In a bowl, whisk together Greek yogurt, coconut milk, vanilla, cinnamon, sweetener, and salt until smooth and creamy.

Step 3: Combine

  • Fold the raspberry puree and shredded coconut into the yogurt mixture. Leave a few raspberry streaks for a pretty marbled effect.

Step 4: Fill the molds

  • Pour the mixture evenly into 6 popsicle molds. Leave a little space at the top for expansion.

Step 5: Freeze

  • Insert the sticks and freeze for 4–6 hours, or until completely firm.

Step 6: Serve

  • Run the outside of the molds briefly under warm water, then gently remove the popsicles. Serve immediately.

Nutrition will vary depending on the coconut cream, Greek yogurt, and sugar-free sweetener used.

  • Raspberries are a low-GI fruit and provide fiber, which can help moderate the rise in blood glucose.
  • Unsweetened Greek yogurt adds protein without adding much carbohydrate.
  • Using unsweetened coconut milk and coconut helps avoid unnecessary added sugar.
  • Choose a sugar-free sweetener rather than honey, maple syrup, or regular sugar if you’re keeping the carbohydrate load low.

  • Stick to 1 popsicle per serving rather than eating several at once.
  • Use small popsicle molds to keep portions naturally controlled.
  • For a more substantial dessert, pair one popsicle with a small serving of protein-rich Greek yogurt or a few nuts.
  • For a lighter dessert, reduce almonds to 1–2 tsp.
