  • 2 cups fresh spinach leaves (washed & dried)
  • 1 ripe avocado (cubed)
  • ½ cucumber (sliced)
  • 8–10 cherry tomatoes (halved)
  • ¼ red onion (thinly sliced)
  • 1 tbsp roasted sunflower seeds or pumpkin seeds
  • 1 tbsp feta cheese (optional, crumbled)
  • 1 tbsp olive oil
  • 1 tsp lemon juice (freshly squeezed)
  • ½ tsp Dijon mustard
  • Salt & pepper to taste

Step 1: Prepare the base

Place fresh spinach leaves in a large salad bowl.

Step 2: Add fresh veggies

Add cucumber slices, cherry tomatoes, and red onion.

Step 3: Add avocado

Gently fold in cubed avocado to avoid mashing.

Step 4 : Make the dressing

In a small bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper.

Step 5: Toss & combine

Drizzle dressing over the salad and toss lightly until well coated.

Step 6: Finish & serve
