A savory, melt-in-your-mouth appetizer bursting with garlicky spinach and creamy feta, nestled inside juicy roasted mushrooms—perfectly satisfying and diabetes-friendly!


  • 12 large button mushrooms (stems removed)
  • 1 cup fresh spinach (finely chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1 tbsp cream cheese (optional, for extra creaminess)
  • 2 tbsp finely chopped onion
  • 1 tbsp parsley (chopped)
  • Salt & pepper to taste
  • Optional: pinch of chili flakes for heat

Step 1: Prep the Mushrooms

  • Preheat oven to 180°C (350°F)
  • Clean mushrooms and gently remove stems to create space for stuffing

Step 2: Make the Filling

  • Heat 1 tbsp olive oil in a pan
  • Sauté garlic and onions until fragrant
  • Add chopped spinach and cook until wilted
  • Turn off heat, then mix in feta cheese, cream cheese (if using), parsley, salt, and pepper

Step 3: Stuff the Mushrooms

  • Brush mushroom caps lightly with remaining olive oil
  • Spoon the spinach-feta mixture into each cap

Step 4: Bake

  • Place on a baking tray and bake for 15–20 minutes until mushrooms are tender and tops are slightly golden.

Step 5: Serve

  • Garnish with parsley and serve warm
